When making any dish from scratch, use the freshest ingredients to enhance the flavor. For today's recipe, I used fresh parsley, rosemary, and thyme from my local grocery store; if you grow your own, even better.

Let’s start to cook

  • Peel, wash, cut, and cook potatoes in a pot until fork-tender.

  • Heat skillet and add olive oil.

  • Add chopped onions, fresh thyme, celery and garlic.

  • Sauté over medium-high heat until golden brown.

  • Add minced meat.

  • Add spices (paprika, garlic & salt). Only add salt to taste.

  • Once the meat is cooked, add corn, carrots, and fresh spinach (fresh or frozen peas are optional).

  • Once the meat and veggies are cooked, add beef broth and diced tomato.

  • Lower the stove to medium heat, and simmer until the sauce is thick in the pan.

  • Turn off the stove and set the minced meat aside.

At this time, the potatoes should be cooked.

  • Mash the potatoes with butter, rosemary, a pinch of salt, fresh thyme, milk, and parsley.

  • Blend in a generous amount of parmesan cheese.

I added one sweet potato to this recipe for extra flavor.

  • Once the potatoes are blended, spread over your minced meat with vegetables.

  • Cover thoroughly and top with a little extra cheese

Bake in the oven until golden brown at 350 degrees.

Let it cool and enjoy.

This dish can serve 2-3 people and is perfect for dinner and date night. Impress your family with this one. Leave a comment below and tell me how you like my recipe for one-skillet homemade shepherd's pie.
